Giant Chocolate Chip Cookies
Recipe
1/2 c Butter, room
temperature
1 1/4 c Granulated sugar
1/3 c Brown sugar
1 Large egg
1/2 ts Vanilla extract
1 c (+ 2 t.) all purpose flour
1/2 ts Salt
1/2 ts Baking soda
1 c Semisweet chocolate chips
1/2 c Coarsely chopped walnuts
Preheat the oven to 350F. Beat the butter and both sugars in a large mixing
bowl until light and fluffy. Add the egg and vanilla extract and mix well.
Mix the flour, salt, and baking soda in another bowl. Add the dry ingredients
to the batter and mix until well blended. Stir in the chocolate chips and
walnuts.
Drop the chocolate chip cookie dough by small scoops 2 to 3 inches apart on an
ungreased cookie sheet. Flatten each scoop with the back of a spoon to about 3
inches in diameter.
Bake the chocolate chip cookies until the centers are still slightly soft to
the touch, 11 to 14 minutes. Let cool on the cookie sheet for 5 minutes, then
transfer to racks to cool completely.

Low Fat
Chocolate Chip Cookie Recipe
1/2 c Granulated sugar
1/4 c Packed brown sugar
1/4 c Margarine
1 ts Vanilla
1 Egg white
1 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1/2 c Miniature semisweet Chocolate chips
Heat oven to 375F. Mix sugars, margarine, vanilla, and egg white in large bowl.
Stir in flour, baking soda, and salt. Stir in chocolate chips.
Drop dough by rounded teaspoonfuls, you may find it easier to roll in your hand
and place on sheet, the dough tends to be very crumbly. 2 inches apart onto
ungreased cookie sheet.
Bake 8 to 10 minutes or until golden brown. Cool slightly; remove from cookie
sheet. Cool on wire rack.
1 cookie: 60 calories; 20 calories from fat; 2 gram fat; 0 mg cholesterol

Chewy Chocolate Chip Cookie Recipe
2 1/4 c All-purpose flour
1 ts Baking soda
1 ts Salt
1 c Butter -- softened
3/4 c Granulated sugar
3/4 cn Brown sugar, packed
2 ts Vanilla
2 Extra large eggs
24 oz Chocolate chips -- (2 Packages)
Preheat oven to 375F. Combine flour, baking soda, and salt in a bowl, set
aside. Cream together butter, granulated sugar, brown sugar, and vanilla. Do
not over beat mixture. Add eggs one at a time, combining well after each
addition. Gradually stir in flour mixture. Stir in chocolate chips, in 2 or 3
additions, mixing well.
Drop by rounded tablespoon onto ungreased cookie sheets. Bake for approximately
10 minutes, until lightly browned and centers have just set - they should look
almost a bit underdone. Let stand for 10 to 15 minutes to cool before moving to
wire racks to finish cooling.

Diabetic
Chocolate Chip Cookie Recipe
3/4 c Vegetable oil
2/3 c Sugar
1 lg Egg
1 ts Baking powder
1/2 ts Baking soda
1 1/2 c All-purpose flour
1/3 c Unsweetened cocoa
2 tb Water if dough is dry
1/4 c Chopped walnuts
1/2 c Semisweet chocolate chips
Beat together the oil, sugar, and egg. Add the rest of the ingredients and stir
to blend well. Let stand for 10 minutes. Drop by spoonfuls, about 1 inch apart,
onto a lightly oiled baking sheet. Bake for about 8 minutes at about 375 F.
One cookie - 106 calories, 1 starch/bread, 1 fat exchange 2 g protein, 18 g
carbohydrate, 6 g fat, 124 mg sodium

Chocolate Chip Cookie Recipe
2 1/4 c All-purpose flour
1 ts Baking soda
1/2 ts Salt
1 c Butter; softened
3/4 c Granulated sugar
3/4 c Packed light brown sugar
1 ts Vanilla extract
2 Eggs
12 oz Semi-Sweet Chocolate Chips
1 c Chopped nuts (optional)
Heat oven to 375F. Stir together flour, baking soda and salt. In large bowl,
beat butter, granulated sugar, brown sugar and vanilla with electric mixer
until creamy. Add eggs; beat well. Gradually add flour mixture, beating well.
Stir in chocolate chips and nuts, if desired.
Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8 to 10 minutes or
until lightly browned. Cool slightly; remove from cookie sheet to wire rack.
Cool completely.
