LowFat Desserts

Low Fat Cheesecake Recipe

• 3 tbs Graham cracker crumbs, divided

• 2/3 cup Boiling water

• 1 pkg. (4-serving size) Lemon Flavor Sugar Free Low Calorie Gelatin

• 1 cup Low Fat Cottage Cheese

• 8 oz. Fat Free Cream Cheese

• 2 cups thawed lowfat Frozen Whipped Topping (ie. Cool Whip)


Sprinkle 1/2 of the crumbs onto side of 8- or 9-inch springform pan or 9-inch pie plate sprayed with no stick cooking spray.

Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Cool 5 minutes. Pour into blender container. Add cheeses; cover. Blend on medium speed until smooth, occasionally scraping down side of bowl.

Pour into large bowl. Gently stir in whipped topping. Pour into prepared pan; smooth top. Sprinkle remaining crumbs around outside edge.

Refrigerate 4 hours or until set. Remove side of pan just before serving the low fat cheesecake recipe. Store cheesecake in refrigerator.

Low Fat Chocolate Cake Recipe

• 1 1/4 cups Flour

• 3/4 cup Granulated sugar

• 1/4 cup Cocoa

• 1/4 cup Margarine -- softened

• 1 tsp Baking powder

• 1 tsp Baking soda

• 1/4 tsp Salt

• 2 large Egg white

• 1 tsp Vanilla

• 1 cup Hot water

• 2 tsp Confectioner's sugar

Preheat oven to 350F. Measure ingredients into mixing bowl in the order given, beat until smooth. Pour into 9x9 inch pan that has been sprayed with no-stick cooking spray or use wax paper to line the pan.

Bake about 25-30 minutes or until an inserted wooden pick comes out clean. Serve warm or cool. If cool, sift icing/confectioner's sugar over cake. Cut 16 servings.

Low Fat Pumpkin Pie Recipe

• 1 Low Fat Ready Made Graham Pie Crust

• 2 cups skim milk

• 1 cup canned pumpkin

• 1 (1 ounce) package Sugar Free Instant Vanilla Pudding Mix

• 1 tablespoon pumpkin pie spice

• 1 (8 ounce) container fat-free or lite whipped topping, thawed, divided

Combine milk, pumpkin, pudding mix and spice in a mixing bowl. Beat with electric mixer until smooth.

Fold in one half of the whipped topping. Spoon into pie crust. Top with remaining whipped topping. Freeze or refrigerate at least 2 hours before serving.

Low Fat Apple Pie Recipe

• 6 cups thinly sliced peeled apples

• ¼ cup sugar

• 1 tsp ground cinnamon

• 1 tbs cornstarch

• 1/8 tsp salt

• ¾ cup all-purpose flour

• 3 tbs margarine

• 2 to 3 tablespoons cold water

• Dash ground nutmeg

• Skim milk

Place apples in a 10x6x2-inch baking dish.

In a small mixing bowl combine sugar and cinnamon; set aside 1 tsp of the mixture. Stir cornstarch and salt into remaining sugar mixture and mix well. Sprinkle evenly over apples in dish.

In a medium mixing bowl stir together flour and nutmeg. Cut in margarine till mixture resembles coarse crumbs. Sprinkle 1 tbs of the water over part of the mixture; gently toss with a fork. Push to side of bowl. Repeat till all is moistened. Form into a ball. On a floured surface roll dough into a 12x8-inch rectangle. Cut vents in pastry. Carefully place pastry atop apples; flute edges to sides of dish, but not over the edge. Brush pastry with milk and sprinkle with the reserved sugar mixture.

Bake in a 375F about 40 minutes or till apples are tender and crust is golden brown. Serve warm.

Low Fat Key Lime Pie Recipe

• 1 c Graham cracker crumbs

• 3 tb Melted margarine

• 2 tb Sugar Subs (ie. NutriSweet)

• 1 pk 1/4 oz. - unflavored gelatin

• 1 3/4 c Skim milk

• 1 pk 8 oz. reduced fat cream -cheese, softened

• 1/3 To 1/2 cup fresh lime juice

• 1/2 c Sugar Subs.

• Spoonful Lime slices

• Mint sprigs

Combine graham cracker crumbs, margarine and 2 tbsp sugar substitute. Spoon the graham cracker crumb mixture into bottom of 7-inch springform pan; pat evenly on sides and 1/2 inch up the side of the pan.

Sprinkle gelatin over 1/2 cup of the milk in small saucepan; let stand 2 to 3 minutes. Cook over low heat, stirring constantly, until gelatin is dissolved.

Beat cream cheese until fluffy in small bowl; beat in remaining 1 1/4 cups milk and the gelatin mixture. Mix in lime juice and 1/2 cup sugar substitute. Pour the mixture over your crust and refrigerate pie until set, about 2 hours.

To serve, loosen side of pie from pan with small spatula and remove side of pan. Place pie on serving plate; garnish with lime slices and mint. Makes 8 servings. Serving size 1/8 pie.
